High-Protein Vegetable Cutlet

  1. Steam or pressure-cook all vegetables and potatoes until soft. Drain excess moisture.
  2. Mash vegetables well in a bowl.
  3. Add whey protein, paneer, bread crumbs, salt, ginger, green chillies, garam masala and coriander leaves. Mix to form a dough.
  4. Divide into about 13 portions and shape into patties.
  5. Dip each patty into the besan/rice flour batter, then roll in bread crumbs.
  6. Heat oil in a pan and shallow fry the cutlets until golden and crisp on both sides.
  7. Remove and serve hot with chutney or sauce.
