High-Protein Vegetable Upma

  1. Dry roast the semolina on medium heat until light golden and aromatic. Set aside.
  2. In a pan, heat oil or ghee. Add mustard seeds and let them splutter. Add urad dal, green chilies and onions. Sauté for 2 minutes. Add chopped vegetables and cook for 3–4 minutes.
  3. Add water, salt and turmeric and bring to a boil. Stir in the protein powder until dissolved.
  4. Slowly add the roasted semolina while stirring continuously to avoid lumps. Cook until water is absorbed and upma becomes soft.
  5. Turn off heat, cover and let steam for 2 minutes. Garnish with coriander leaves and lemon juice if using.
